Beet & Blue Cheese Salad

Remember those beets we made, like 5 minutes ago?  Well here is a beautiful salad that’s just calling their name! ​

Beautiful beets atop a nice bed of red leaf lettuce, add some blue cheese, pecans, red onion, carrots, and cucumber.  Top it all off with a splash of balsamic vinaigrette and that’s what I call dinner! 
This salad could be a meal by its self, or you can serve it as a side if you like.  If I’m having it for dinner, or lunch, I usually add a piece of chicken or salmon, but that’s entirely up to you.  Maybe you are just trying to get some more veggies in your diet, in which case, this is the perfect meal for you! 
This is my absolute favorite salad to take somewhere if I’m asked to bring a side dish.  Usually I pair it down a bit and just include the lettuce, blue cheese, dried cherries, beets, and pecans.  Trust me, people will rave, and over such an easy dish. ​

Serves: 4-6 servings 
Ingredients 
  • 1 Bunch Red Leaf Lettuce 
  • 1 C Pickled Beets, diced 
  • ½ C Blue Cheese, crumbled 
  • ½ C Pecans, roughly chopped 
  • 1 Avocado, sliced 
  • ¾ C Dried Cherries 
  • Balsamic Vinaigrette dressing 
Instructions 
  1. Rinse and chop Red Leaf Lettuce into bite sized pieces 
  1. Spin lettuce to dry thoroughly 
  1. In a large bowl, layer ingredients starting with lettuce and ending with cherries 
  1. Set dressing on the side to be added as the salad is served 
  1. Enjoy!
